If you change your class do you lose the level you are at, or does your HP and MP just change?

It did change my level. T_T

I was at 10, then I read this and deleted my character, thinking I would keep my levels and just change my background/clan/class.

That's because you delete your character.

The "change class" thing people where talking about here is located in the Training Grounds. It allows you to change your class without deleting a character.
However you cannot modify your clan, alignment and element without deleting your character.
